Bagels are traditionally quite time-consuming to make. But this easy bagel recipe skips a lot of the extra steps! When you make bagels without yeast, you save time as the dough doesn't have to prove. These bagels are also simply baked, without having to boil or poach them first.

Making your own bagels is perfect for a simple, but impressive breakfast. They are a great option for Mother's Day brunch, Christmas breakfast, or as an alternative to a sandwich.

Ingredients

Greek yogurt: You will have to use real full fat Greek yogurt. Low-fat yogurt, or “Greek style” yogurts will not work as well, as the bagels will become dry and crumble while baking.

Self-raising flour: This is all-purpose flour mixed with raising agents, which allows the bagels to rise without adding extra ingredients. You can alternatively use all-purpose flour, and 2 teaspoons baking powder.

Everything bagel seasoning: This optional topping adds fantastic flavor to the bagels. You can omit this to make plain bagels, or substitute it with sesame bagels or any other flavors that you like.

One: Combine Greek yogurt and self-raising flour in a mixing bowl. Knead with your hands, or with an electric mixer, until the dough sticks together. Be careful not to over mix the dough at this point, or it might become too sticky.

Two: Divide the dough into 6 equal sized pieces, and roll them into little balls. If the dough is quite wet, you might want to add some flour to your surface to prevent the dough from sticking to your surface.

Three: Push your thumbs through the middle of the dough balls to create a hole. Stretch this out to make a bagel shaped ring. Place the bagels on a sheet pan or baking sheet covered with parchment paper, and make sure to space them a little apart.

Four: Optionally, brush the bagels with egg wash, milk or water. This will give them a lovely golden shine, and helps the seasoning to stick to the dough.

Five: Sprinkle the seasoning on top of the bagels. You can omit this step if you prefer to make plain bagels.

Six: Bake the bagels in a preheated oven at 375 F / 190 C for about 25 minutes. If they are looking a little pale, you can turn the temperature up to 425 F / 220 C, and bake for a few minutes until the bagels are golden brown.

Top tips

  • Avoid over working the 2 ingredient bagel dough. The whole milk Greek yogurt and flour should only be just combined.
  • Keep an eye on the bagels while they bake. They are done when they are golden brown.
  • Serve the warm bagels immediately, or allow them to cool down first.
  • Add egg wash or water to the bagels before you sprinkle them with seasoning.

Variations

Gluten free version: Use gluten free flour and baking powder. I like to use gluten free all purpose flour, but other types might also work. You can also find gluten free self raising flour in many grocery stores and supermarkets.

Different flavors: Substitute the everything seasoning with sesame seeds, or omit them altogether. You can also add flavored ingredients to the bagel dough, like sea salt, blueberries, raspberries, or raisins.

Air fryer bagels: You can cook these bagels in an air fryer. Lower the temperature by 20 degrees F, or 10 degrees C, and check on them regularly as they will likely finish baking sooner.

Equipment

To make these easy three ingredient bagels, you will need a mixing bowl, a sheet pan and parchment paper or baking paper.

They can be baked in an oven or air fryer, so use whichever method suits you better. Keep in mind that an oven has more space than an air fryer basket. If you choose to use the air fryer, you might have to bake the bagels in several batches.

Storage

You can store leftover bagels at room temperature for up to 4 days, or freeze them for up to 3 months. Defrost and thaw frozen bagels overnight, and serve them immediately.

As the bagels store so well, you can easily double or triple the recipe, and freeze a batch down for later. Defrost individual bagels if and when required.
