There’s a bottle half full of raspberry cordial that was left over from the church social the other night. It’s on the second shelf of the sitting-room closet, and you and Diana can have it if you like, along with a cookie to eat in the afternoon.

Is there anything more magical than the world of Anne with an e? I have very fond memories of watching the movies over and over again.

When my mom harvested about a billion raspberries this year, she began thinking back to the movies and wondered how one goes about making the delicious cordial they mention. Being a good daughter (possibly with the wild and untamed nature of Anne), I was on a mission to learn how to make raspberry cordial.

Inspired by the beloved Anne of Green Gables, this raspberry cordial is more than just a cool summer drink; it takes you back to the beautiful scenery of Avonlea with every sip. This recipe stands out because it is easy to follow and has a pure, bright raspberry flavor with a hint of orange zest. How to Make Raspberry Cordial

This drink is a nostalgic nod to Avonlea and is great for hot summer days.

Ingredients

  • 4 cups of raspberries, tightly packed
  • 1 1/4 cup of water
  • 1 1/4 cup of sugar
  • 1 orange

Instructions

Peel the orange and remove as much pith (the white stuff) as possible. Too much pith will make your cordial bitter. Snack on the orange, and set the peels aside for the cordial.

In a food processor or using a stick blender, blend raspberries until smooth.

In a saucepan over low heat, mix water and sugar and gently stir until the sugar has dissolved. Once the sugar has dissolved, add in the orange peels. Raise the heat to medium-high until it boils gently, and then reduce the heat to a simmer. Continue simmering for 2 minutes.

Remove from the heat and stir in the raspberry puree. Allow the cordial to cool completely, and then strain through a sieve or jelly bag to remove the seeds.

Storing Homemade Cordial

Store your raspberry cordial in a clean, airtight bottle, jug, or mason jar in the refrigerator for up to 4 days, or you may find yourself in the depths of despair.
