Favorite Spring Salad

Celestial Salad has been a family favorite at our house for years. It is always on our Easter menu as well as making frequent appearances on our dinner table throughout the year. As far as I’m concerned it is pretty heavenly.

Celestial Salad Dressing

The dressing is very light and is a combination of olive oil, sugar, white vinegar, red vinegar, salt and pepper and a sprinkle of red pepper flakes.

This salad dressing will keep for several weeks in the refrigerator.

    This salad is indeed celestial
I usually don’t like sweet fruits in vegetable salads, but this combination sounded good, so I tried it. I only tweaked the dressing a bit – lemon juice instead of the vinegar (I don’t like white vinegar) and the sweet juice from the Mandarine oranges instead of the sugar.
My husband, who requests new tastes regularly, was also pleased. The kids did not like it, but I expected that

You mention sugared almonds, but it doesn’t give instructions on how to do it. There are 2 T sugar included in the ingredients. Is that for the almonds? At the end of the dressing ingredients it just says, “sugar the almonds”. Could you please clarify?

It still doesn’t say how to sugar the almonds. Just says sugar the almonds.

The directions are there but they were kind of hidden, I just updated the recipe to make it easier to find. I also have a tutorial here on how to sugar or candy nuts.https://www.yourhomebasedmom.com/how-to-make-candie-pecans/

How many almonds does the recipe call for? It looks like it is maybe supposed to say 1/2.
    Thanks!

Definitely trying this one – I served a similar salad from your site recently, one with strawberries, and it was a huge hit. Those sugared almonds rock!
